Why I Started Gluten Free PhD

Through this journey, I realized how overwhelming the gluten-free transition can be—especially for parents doing it alone. There’s so much misinformation, so many hidden dangers, and so many moments where you feel completely isolated.

I know what it’s like to stay up late researching, second-guessing every decision. I’ve experienced the worry, the exhaustion, and the weight of responsibility that never really goes away.

I started Gluten Free PhD to share what I’ve learned and build a community for others walking this same path.

And yes—I really do have a Doctorate of Philosophy (PhD)—but my greatest lessons have come from living this gluten-free life day by day.

In the Beginning

From the moment my daughter was born, I wanted nothing more than to protect and nurture her. But by the time she turned three, I could tell something was very wrong. Her tiny body wasn’t growing the way it should, and despite my best efforts, she wasn’t getting the nourishment she needed.

After months of searching, the diagnosis finally came: celiac disease.

It hit hard—but it also brought clarity.

Food, something that should have been simple and joyful, suddenly became a source of fear. As a single dad to two amazing girls—one with celiac disease and one without—I had to learn quickly how to create a safe, balanced environment for both of them.

There was no playbook, no team of adults to lean on. It was just me, determined to learn, protect, and empower.

The Diagnosis & Learning Curve

The diagnosis brought clarity after months of worry—but it was only the beginning.

Learning about gluten, cross-contamination, and hidden ingredients was overwhelming. Every grocery trip felt like an exam: reading labels line by line, memorizing safe brands, and cross-checking every ingredient.

I learned that even a crumb could cause harm.
That restaurant kitchens could unknowingly cross-contaminate.
That well-meaning friends and family often didn’t understand the severity.

I would double- and triple-check packaging, sometimes putting items back on the shelf because I just wasn’t sure. Dining out became a minefield of questions and clarifications. Mistakes still happened.

It became a daily commitment to vigilance, patience, and a kind of resilience I never knew I had.

Balancing life with two daughters—one gluten-free, one not—meant constant adjustment. Over time, I realized this wasn’t just her journey—it was ours.

The Challenges of Raising a Gluten-Free Child

The hardest part wasn’t just finding safe food—it was navigating childhood itself.

🎂 Birthday parties meant bringing my own cupcakes.
🥪 School lunches required constant communication with teachers and cafeteria staff.
🍕 Restaurants demanded trust, patience, and sometimes disappointment.

Even classroom projects and art supplies required planning ahead so she could participate safely.

But beyond logistics, there was the emotional toll. Watching her sit out at snack time or explain her condition to adults who didn’t understand was heartbreaking.

There were tears, questions of “why me?”, and moments where I felt helpless.

Still, I stayed determined to create a world where she could thrive—where she could just be a kid, confident and included.

Unfortunately, not everyone understood. Some adults lacked empathy, which only made her feel more isolated. It took extra effort to advocate, educate, and remind others that this disease is invisible but very real.

How Going Gluten-Free Changed Everything

Despite the challenges, the transformation was incredible.

Within months of going gluten-free, my daughter had more energy and vitality. The constant stomachaches disappeared. Her body began to heal.

I made the decision to go gluten-free alongside her. It wasn’t just about keeping her safe—it was about standing with her.

We experimented with recipes, discovered amazing gluten-free brands, and learned together through trial and error. Grocery trips turned into adventures. Cooking together became family time.

Every successful recipe felt like a victory; every failed one, a lesson.

Holidays and special occasions took on new traditions, and our table became a place of creativity and laughter instead of fear and restriction.

This lifestyle isn’t easy—but it’s worth it.
And seeing her healthy, confident, and thriving makes every challenge worthwhile.
